Satisfy the comfort food craving with fideo
Such an easy dish to make, so versatile, and so satisfying. This can be made as a side dish, or as Erika explains, it can even be rounded out with a protein to make a one-dish meal.

Fideos
(Noodles)
1 SMALL BAG OF FIDEO
1/4 CUP DICED ONIONS
1 CLOVE CHOPPED GARLIC
2 TEASPOONS OF SALT
1/2 TEASPOON OF PEPPER
1 TEASPOON OF DRY OREGANO
1 TO 2 CANS OF TOMATO SAUCE (TO YOUR LIKING)
This dish is very fast and can be made simultaneously with another dish. Take the bag of Fideo and break to small pieces. Take your pan and add 2 teaspoons of either shortening or olive oil. You want to brown your fideo, stirring constantly so they don’t burn over medium heat. When most of your fideo are brown, add your onions and garlic and let them sauté. Add your cans of tomato sauce along with two cups of water. Add your oregano, salt and pepper and cover with a lid. Let the fideo cook until soft and ready to serve. This is quick, cheap and for those of you on the go like us, fast to make and a great side dish.
Winter’s Special: Baked Spaghetti
This has been the coldest winter I can remember since we moved here 28 years ago! My scarf seems to be permanently attached to my neck. This weather reminds me of the Midwest winters. Once we got our first snow fall, it would then stay on the ground for the rest of the winter season. We can now relate to the mid westerns.
The Winter’s Special (Baked Spaghetti) is an old family recipe that was my husbands grandfathers favorite dish. Art Winters, better known as, “Gunk,” ( a nickname). Grandpa Gunk lived to be 103 years of age. He had a great sense of humor and loved preparing this dish that has been passed on to us and would love to pass this on to you. This is one of my favorite recipes and so easy to prepare,
I serve this dish with fresh garlic bread, salad and red wine. The leftovers never seem to make it to the freezer. You’ll see why.
1 lb spaghetti
1 lb bacon
1 lb sharp cheddar cheese
1 large can whole or diced tomatoes (24 oz)
red pepper (cayenne)
salt
Cut bacon into 1 inch pieces; fry or broil
Cook spaghetti and drain
Grate cheese
In large bowl (4.5 QT), mix spagetti and small amount of bacon grease (2 tablespoons) to coat strands; alternately, add cheese, bacon, tomatoes (if whole, mash slightly or dice), and salt and red pepper to taste. Mix well. Bake at 350 degrees for about 45 minutes.
Serves 8
Recipe may be doubled. Any surplus can be frozen for future serving.
